Application fields:
1. Food processing
In bread processing aspect, the use of laccase can increase the bread volume, improve the bread structure and softness, while improve the mechanical strength and stability of dough during processing, and can reduce viscosity. For flour of poor quality, it can significantly improve the mechanical processing performance of the dough.

2. Brewing industry
The laccase can remove phenolic compounds remained during the production and storage period of beers, wines, fruit and vegetable juices, thus to avoid the secondary turbidity caused by the polymerization of phenolic compounds and proteins. |
3. Papermaking and Beating
The laccase can remove lignin from wood pulp, thus to adjust the fiber structure or recombine fibers, with the effect of bleaching the pulp; the use of laccase in waste paper deinking process is a fast and non-polluting new technology. |
4. Sewage Treatment
The laccase can degrade anthraquinone dyes, azo dyes and triphenylmethane dyes, with a high decolorization rate; when used in the treatment of papermaking wastewater, it can remove trimethylolphenol, dissolve part of the lignin in the pulp, and reduce the wastewater chromacity; |
